We’re in Utah having our Nissan NV3500 van converted to 4×4 by Advanced Four Wheel Drive in Salt Lake City.
While waiting for the van, we hit three different plant-based restaurants, Vertical Diner, All Chay & Zest Cafe. Also, two museums, the Utah Museum of Contemporary Art and Utah Museum of Fine Arts. We also make a quick stop at the Bonneville Salt Flats.
Join us next time when we pick up our van and then head to Colorado to continue our outfitting project.
